Summer is officially here! One of my favorite things about summer is summer food. I love all the delicious fruit, cold drinks and BBQ. I was at Trader Joe’s yesterday and saw a they had coconut/aloe water. Both are really great for staying hydrated so I decided to pick up a box to add to my morning smoothie. I went full fruit today, inspired by creating a Pina Colada type taste without the coconut cream, which can leave you feeling full and weighed down instead of refreshed.
Ingredients:
Trader Joe’s Coconut Water with Aloe Vera Juice (1 cup)
1 handful of frozen pineapple
1 ripe banana
1 lime cut into fours
I used my Vitamix to make this but a blender would easily work as well.
I added the banana first, then coconut/aloe water. Then I added the frozen pineapple. It’s really important that the pineapple is frozen. It will give you the coldness and blended effect without having to add ice and have your drink be watered down. The banana will add the creamy factor. I cut the lime into fours and squeezed three of them into the blender. I pulsed the mixture for about a minute. Pour and squeeze remaining lime slice then garnish on the cup if desired.
I am sure you can add some rum to this if you want a good pool or BBQ cocktail.
I love how easy but delicious this smoothie is.
